Slice fresh pineapple into 1cm thick slices – you can cut out the cores if you want to, but we just nibble around them. Brush both sides with Old Brown Sherry or a sugar mixture made up with 4 parts water to 1 part sugar and place on a braai grid.

Very hot coals will give you a great looking char and will be crunchier. Using medium heat coals means you’ll need to braai them for longer to produce a sweeter and softer result.

As a breakfast option, serve with plain yoghurt and a drizzle of honey and a handful of nuts.
As a dessert, dollop generous amounts of ice cream over the still warm pineapple.
